Yes, you can fry ice cream.

Yesterday, I made quwesadillas for my sisters for dinner (because the only food items in my house were: tortillas, cheese, chicken, and oatmeal). That is not a joke. Sad, I know. Since I'm getting in touch with my Spanish roots in preparation for my month in the Dominican Republic this summer :) we decided to attempt some fried ice cream for dessert! Turned out so delicious! I highly recommend making it at home.

Pretty simple really,
1. Scoop vanilla ice cream into little balls and freeze on a sheet pan.
2. Take em out, quickly roll each ball in eggs, then cover in an oatmeal and cinnamon sugar mixture and put them back in the freezer to harden.
3. Heat up some oil in a shallow pan. **Important frying lesson I learned yesterday, flick some water into the pan to make sure the temperature is hot enough, but not so hot that you're going to have splattering oil everywhere (not good.)**
4. Roll the ice cream ball in the oil for about 7 seconds or so, long enough to brown them but not so long that the oatmeal starts melting off the ice cream.
5. Then you just stick em on a warm tortilla and add more cinnamon sugar and some honey.

So so tasty! A perfect dessert after a Mexican-themed dinner. I can't wait for real Mexican food. 4 weeks until Cabo :)
